Ghevar is a traditional sweet dish specially prepared on festivals. If you like to eat ghevar and want to make net and crispy ghevar at home, then our mentioned recipe can be very useful for you.
Ghevar is such a sweet which is eaten by adults as well as children with great interest. Everyone can be compelled to praise after eating ghevar wrapped in sugar syrup. Let’s know the easy recipe to make Tasty Ghevar.

Ingredients to make Ghevar
Maida – 2 cups
Milk cold – 1/2 cup
Desi ghee – 1/2 cup
Sugar – 1 cup
Lemon juice – 1 tsp
Dry fruits – 1 tbsp
Cardamom powder – 1/4 tsp
Ice cubes – 1 tray
Cold water – 3-4 cups
Oil/ghee – for frying

How to make Ghevar
To make crispy and netted ghevar, first take a big mixing bowl and put half a cup of desi ghee in it. Now put a tray of ice (8-10 ice cubes) inside the ghee and start rubbing. Rub the ghee till it becomes thick and creamy. Ghee will appear white after rubbing for 5-6 minutes, after that stop rubbing. Add 2 cups of refined flour to the ghee and mix well. Keep in mind that do not knead it but crumble it.

After crumbling the flour well, add half a cup of cold milk and mix it. After this, prepare a thick solution after adding 1 cup of cold water. After this add one more cup of cold water to the mixture and then whisk for at least 5 minutes. After 5 minutes add one spoon of lemon juice and one cup of cold water to the solution and beat it again for some time. When the lumps of flour are completely removed and the batter becomes smooth, stop whisking.

Now take a pan and heat oil/ghee in it and place a ring in the middle. When the oil starts boiling, pour 2 tbsp batter keeping distance from the top. This will separate the batter. Pour 2 more tbsp batter once in a thin stream keeping away from ghee. Similarly repeat 10 to 15 times. Make sure that a hole is made in the center while pouring the batter.

Now make the gas flame medium and fry the ghevar till it turns golden brown. After this take it out in a plate. Similarly prepare Ghevar from all the batter. After this, put 1 cup sugar and 1/4 cup water in a vessel and keep it to heat to make sugar syrup. Boil the sugar syrup for 5 minutes. When 2 strings start forming, turn off the gas and take off the sugar syrup.
After making the syrup, put the pre-prepared ghevar in the syrup and keep it immersed for some time. After this, take them out and garnish them with dry fruits clippings. Tasty ghevar filled with sweetness is ready. This can be specially made for the day of Raksha Bandhan.
